Sweet Potato Bacon Hash
Every once in a while I get inspired in the kitchen to put together whatever we have and make what I hope will turn out to be a tasty dish. A few years ago I found some root veggies and some bacon, and got inspired to make this delicious breakfast dish.
Here is what you need
1/2 onion
1/2 bell pepper
1 carrot
1 Sweet potato
1 Yam
Thick cut Bacon
Olive Oil or other cooking oil.
Step 1
Peel the carrot, yam and sweet potato and onion.
Dice all of the vegetables.
Step 2
Put some olive oil in hot skillet
Add the bacon. You can also substitute Pancetta for this step. I don’t use a lot as you can see. It’s simply there to add a little of that smokey bacon flavor.
Step 3
Add the onions and the bell peppers until they soften.
Step 4
Add the sweet potato, yam and carrot
add salt and pepper to taste.
Keep cooking, stirring occasionally until the root vegetables are fork tender.
I like to go a little longer to get some of the char on the veggies.
Taste for salt and adjust before plating.
Step 5: Enjoy
I added a couple of poached eggs on top and had a very yummy breakfast. But this hash works well on its own or as a side dish for your favorite protein.
