Sweet Potato Bacon Hash

Every once in a while I get inspired in the kitchen. We had received our Amazon Fresh delivery a couple of days before and there was some very cool looking organic root veggies I ordered, so I decided to put them to good use. So I created this Sweet Potato and bacon hash.

Here is what you need:
1/2 onion
1/2 bell pepper
1 carrot
1 Sweet potato
1 Yam
Whole 30 compliant bacon (I got it through Model Meals)
Olive Oil or other cooking oil.

​Peel the carrot, yam and sweet potato and onion.
Dice all of the vegetables.

​Put some olive oil in hot skillet

Add the bacon.

​Add the onions and the bell peppers until they soften.

​Add the sweet potato, yam and carrot

add salt and pepper to taste.
Keep cooking, stirring occasionally until the root vegetables are fork tender.

​I like to go a little longer to get some of the char on the veggies.



​Taste for salt and adjust before plating.

​I added a couple of poached eggs on top and had a very yummy breakfast. But this hash works well on it’s own or as a side dish for your favorite protein.
