Sonoma Chicken Salad

This is my take on the Sonoma Chicken Salad I found on the Real Plans website, which has been invaluable as I started the Whole 30.
This is a very simple chicken salad to make. Traditionally, I've seen it has honey and a few other ingredients that make it sweet, this is the Whole 30 compliant version.  I love this dish because, it's easy to make, takes maybe 15 minutes from start to mouthful. Give it a try on a hot summer day!

Easy mayonnaise.

Watch the food network enough and you'll see someone make mayo. They always make it sound difficult, "use a food processor; drizzle in the oil, not too fast; etc." I found this easy recipe for mayo on The Healthy Foodie website. I tried it and had mayo on my first attempt! Easy peasy.

What you need:
  • 1 whole fresh egg.
  • 2-3  tsp lime or lemon juice
  • 1/4 tsp salt
  • 1 cup extra light tasting olive oil (I use half cup extra virgin olive oil and half cup light tasting olive oil. I don't mind the olive oil taste)

Equipment needed:
  • Immersion blender
  • Glass jar that you can fit your immersion blender in. I ended up using a small tupperware container and then transferred the mayo to a small glass jar.

Put all the ingredients in the container, no drizzle, no fancy food processor. Insert immersion blender...blend. Done. It looks like this . . .
If you want some additional options check out the Healthy Foodie Website. You can use this as a base for Creamy Ranch dressing or Caesar dressing. Both Whole 30 compliant.
